As a culinary enthusiast, I ventured on a mission to transform my eating habits and prioritize the health of my thyroid. I gradually replaced unhealthy ingredients with nutritious alternatives, embraced various cooking techniques, and integrated numerous thyroid-friendly recipes into my diet.

In my quest for healthier cooking, I learned to make smart substitutions. Harmful trans fats were replaced with healthier oils such as avocado, olive, and coconut. I swapped regular sugar for alternatives like monk fruit, allulose, stevia, maple syrup, and coconut sugar in moderation. It became evident that gradually replacing high-glycemic ingredients with lower-glycemic options is crucial for our overall well-being.

Discovering thyroid-friendly recipes allowed me to indulge my passion for delicious desserts while nourishing my thyroid. I found creative ways to enjoy ice cream using coconut milk or yogurt combined with frozen fruits. Another delightful option I discovered was organic dark chocolate 70-80% sweetened with pure monk fruit sugar, offering a healthier dessert choice. Adding nuts, dried cherries, or blueberries to melted dark chocolate created irresistible treats.

Throughout my journey, I recognized the importance of combining fiber-rich, protein-packed, and complex carbohydrate-containing foods. This harmonious blend provided a greater sense of satiety, stabilized blood sugar levels, offered sustained energy, and improved digestion. By embracing these principles, I ensured my diet supported a healthy thyroid.

Transitioning to a healthier way of eating involves gradual changes in dietary habits. I replaced rice with a mixture of white rice and quinoa, added more soups and salads with lean protein as main courses, and switched regular dairy to plant milk. I substituted regular flour with gluten-free options and opted for wild fish/seafood instead of farmed alternatives. These adjustments to the thyroid-friendly recipes provided satisfying and nourishing meals that supported thyroid health.

Liliana, has done a wonderful job of breaking down the nutritional needs for thyroid health while also allowing the reader the flexibility of using their intuition and avoiding strict restrictive diets. All of the recipes included in this book look delightful, but I'm most excited to try the Gluten Free Carrot Cake.
