Green Beef Stew

Preparing Your Green Beef Stew

  1. Pat the beef chunks dry with paper towels to ensure a good sear.

  7. Remove the seared beef and set aside.
  8. In the same pot, reduce heat to medium and add the chopped onion and minced garlic. Sauté until fragrant and translucent.
  9. Deglaze the pot with white wine (if using), scraping up any browned bits from the bottom of the pot for added flavor.
  10. Return the seared beef to the pot.
  11. Add coconut aminos and chicken broth, stirring to combine.
  12. Stir in the diced yellow potatoes and bring the mixture to a gentle simmer.
  13. Reduce heat to low, cover the pot, and let the stew simmer for 45–60 minutes, stirring occasionally.
  14. Check for tenderness: the beef should be fork-tender, and the potatoes should be soft but not falling apart.
  15. Taste the stew and adjust seasoning with additional salt and pepper if needed.
  16. Ladle the stew into bowls and garnish with chopped cilantro for a fresh burst of flavor.
