Gluten-Free Fudgy Potato Brownies- Healthy Recipe

Who says you can’t indulge in a decadent dessert while supporting your thyroid health? These brownies prove that healthy ingredients can nourish your body while satisfying your cravings. These grain-free brownies are made with sweet potato, cashew batter, and oat flour, offering a nutritious twist on a classic treat. Rich in nutrients, they support thyroid health without compromising flavor or nutrition. Enjoy a guilt-free dessert that’s both delicious and beneficial for your thyroid.

How This Recipe Supports Thyroid Health

1. Rich in Vitamin A and Antioxidants

Sweet potatoes are an excellent source of vitamin A for maintaining healthy thyroid function. Vitamin A helps regulate thyroid hormone production and supports the body’s ability to metabolize iodine, a crucial nutrient for thyroid health. Additionally, the antioxidants in sweet potatoes help reduce inflammation, which can benefit those with thyroid conditions, particularly autoimmune disorders like Hashimoto’s thyroiditis.

2. Stabilizes Blood Sugar Levels

Oat flour, the gluten-free base of these brownies, provides complex carbohydrates that help stabilize blood sugar. Stable blood sugar levels are vital for thyroid health, as blood sugar imbalances can lead to insulin resistance, which can interfere with thyroid function. Moreover, the fiber in oat flour promotes digestive health, ensuring a balanced metabolism.

3. Healthy Fats for Hormone Production

Cashew butter is rich in healthy fats and contains vital minerals like zinc and selenium, which support thyroid hormone production. Zinc, for instance, is essential for converting inactive T4 into active T3 hormones, while selenium acts as an antioxidant, helping to protect the thyroid from oxidative stress. Together, these nutrients contribute to balanced hormone levels and optimal thyroid function.

4. Combats Inflammation

Cocoa powder, an essential ingredient in these brownies, is packed with magnesium and antioxidants that help reduce inflammation.  As a result, chronic inflammation can hinder thyroid function, especially in those with autoimmune thyroid conditions.

5. Supports Immune Function

Walnuts are rich in omega-3 fatty acids, which help reduce inflammation and support immune function. Additionally, these omega-3s are essential for thyroid health, as they help balance hormone levels and protect the thyroid from autoimmune damage. Therefore, adding walnuts can support hormone balance and overall thyroid health.

6. Low Glycemic Sweeteners

Allulose and maple syrup are natural sweeteners with a low glycemic index. As a result, they are an excellent choice for maintaining stable blood sugar levels, which is essential for thyroid health. On the other hand, high blood sugar fluctuations can lead to insulin resistance, disrupting thyroid hormone production. Therefore, these sweeteners allow you to enjoy a sweet treat without spiking your blood sugar levels.

Enjoy a Guilt-Free Treat While Supporting Your Thyroid

In conclusion, these gluten-free, fudgy sweet potato brownies perfectly balance flavor and nutrition. The ingredients will satisfy your cravings while supporting your thyroid health. Using nutrient-rich ingredients like sweet potatoes, oat flour, and cashew butter, you can enjoy a guilt-free treat that nourishes your body and helps maintain optimal thyroid function.

Step-by-Step Preparation:

  1. Preheat the Oven: First, preheat the oven to 350°F (175°C). Then, line an 8×8-inch baking dish with parchment paper and lightly grease it.
  2. Prepare the Sweet Potato:  Cook and mash the sweet potato until smooth. You can either bake or steam it until soft.
  3. Mix the Wet Ingredients: In a large bowl, whisk together the mashed sweet potato, cashew butter, eggs,  maple syrup (or honey), and vanilla extract.
  4. Add Dry Ingredients: Gradually add the cocoa powder, oat flour, Allulose, baking soda, ground cinnamon, and sea salt. Stir until just combined.
  5. Adjust the Consistency: Then, add milk, one tablespoon at a time, until the batter reaches a thick but pourable consistency. The batter should be gooey but not runny.
  6. Incorporate Chocolate and Walnuts: Gently fold the chopped date-sweetened chocolate and walnuts, and reserve some for topping.
  7. Bake: Pour the batter into the prepared dish, spreading it evenly. Then, top with the reserved walnuts and chocolate.
  8. Check for Doneness: Bake for 20-25 minutes or until a toothpick comes out mostly clean. A few moist crumbs are fine, but be careful not to overbake.
  9. Cool and Serve: Finally, let the brownies cool completely in the pan before cutting them into squares. Top with whipped coconut cream.
