Chocolate Coconut Milk Ice Cream


If you’ve got a sweet tooth like mine, this rich and creamy dessert is a must-try. Just 4-5 ingredients are needed and you can have it ready in a couple of hours. Most importantly, you won’t even require an ice cream maker! There are different versions of chocolate coconut ice cream (dairy-free, organic/plant-based, etc.) that people enjoy in different parts of the world.

For this one, I’ve used organic coconut milk ice cream and unsweetened dark chocolate along with blueberries and raspberries. Also, it’s a healthier version because you’ll replace cow milk with coconut milk and sugar with monk fruit syrup. Isn’t that great?The procedure is quite simple but the result is sure to satisfy your cravings.

You can make this chocolate coconut ice cream cake in no time. Follow the steps below to enjoy a cold, creamy, and yummy dessert.

Ingredients 

  • Organic coconut milk ice cream
  • 1 bar of organic dark chocolate (unsweetened) to decorate
  • Gluten/sugar-free cookies (crumbled)
  • Blueberries
  • Raspberries
  • Cocoa powder

Assembling the Ice Cream Cake

  1. Cover a mini mold with chemical-free plastic on the bottom.
  2. Add crumble protein bars or gluten/sugar-free cookies to the bottom of the pan.
  3. Fill the mold with coconut ice cream
  4. Sprinkle extra pieces of crumble cookies or grated chocolate to cover the coconut milk ice cream completely.

Tip: You can add 2 different flavors of ice cream to make the cake more delicious! Put it into a freezer.

Preparing the Chocolate Cake Wall

  1. Cut a piece of baking paper according to the circumference of the cake.
  2. Place it into a flat counter on top of another baking paper sheet.
  3. Melt half a 40 g dark chocolate bar in the microwave for 90 seconds. Make sure to stir it after every 30 seconds.
  4. Now use a  spoon or brush to paint the strip of baking paper or acetate with the melted chocolate until it is covered completely.
  5. Immediately place this strip around the ice cream cake.

Note: You have to be extra careful here! The ends of the baking paper with the melted chocolate shouldn’t be close together. Make sure to leave some space between both ends for easy peeling. Bring it to the freezer until the chocolate is hard.

Serving

  1. Take out the cake after 1-2 hours and carefully remove the baking paper sheet. You will have a nice wall of chocolate around the ice cream cake.
  2. Decorate with fresh fruit, melted chocolate, and cocoa powder.
