Chicken soup has been around in one form or another for centuries, but it’s a dish that is still enjoyed today. It can be made with any type of meat, but chicken is the most popular and widely-used meat. Today I’m going to make a chicken soup that includes vegetables which will not only add flavor but also improve your health! This soup can be served with Miracle Noodles as well!

This recipe is ideal for cold days when we crave something hot and delicious.

Ingredients

  1. Organic chicken
  2. Garlic
  3. Celery
  4. Carrots
  5. Onion
  6. Fennel
  7. Parsley
  8. Peppercorns
  9. Dried oregano 
  10. Salt
  11. Avocado oil
  12. Leek
  13. Zucchini
  14. Asparagus
  15. Cabbage
  16. Squash
  17. Chard
  18. Broccoli

How to Make Chicken Soup With Vegetables?

  1. Place the chicken into the pot and add enough water to cover the chicken.
  2. Add the garlic, celery, carrot, onion, fennel, parsley, peppercorn, dried oregano and salt to taste. Boil for 90 minutes at low temperature.
  3. Remove the chicken from the soup and shred.
  4. Boil the soup for an extra 45 minutes.
  5. Strain and discard the vegetables.
  6. Heat avocado oil in a large soup pot over medium heat.
  7. Add chopped onion, celery, leek, carrots, fennel, garlic and ginger. Stir fry until fragrant, about 2-3 minutes.
  8. Add the chicken broth and cook for around 15 minutes.
  9. Add chopped zucchini, asparagus, squash, chard and broccoli. Cook for about 15 to 20 minutes.
  10. Add parsley and shredded chicken to the soup, mix properly and simmer for another 15-20 minutes until all vegetables are tender.
  11. Serve hot and enjoy!
